We sat down with him for a quick dram and a chat. Here’s what he had to say…
What’s the very first whisky you remember tasting?
A Ben Nevis 18-year-old from a sherry cask – Dean and Neil brought it back from Scotland. We tasted it during a training session to learn how different whiskies can be, and it really stuck with me.
Which whisky from the Corowa Distilling Co range do you reach for most often?
Bosque Verde. I’ve always been drawn to port casks – they’re part of our origin story, and the name holds alot of meaning for us.
If you could age whisky in any type of barrel (no rules), what would you pick?
A chilli cask. Imagine the heat and spice weaving into the spirit – it’d be wild. Sadly, rules say no… but a distiller can dream.
What’s the most unusual pairing you’ve tried?
Dark chocolate with sea salt and chilli. Sounds odd, works brilliantly.
If you could pour a dram for anyone, who would it be?
Matty Matheson. He’d get it.
